The Amazing Shrinking Chard

Today was CSA day, every Thursday I take the bus down to the Olympia Farmers Market to get our CSA box from Boistfort Valley Farm. I was planning on making lasagna tonight so I had planned to get a lot of chard for it. Last time I made it I used the one bunch they had in our box and Ryan and I both thought, “Oh my this is way too much”. And then it cooked down to this itsy, bitsy amount. So today I bought 3 big bunches of chard.

I cut out the stalk and tore the leaves a bit and then put them in our big pot to cook.

I cut up the stalks and sauteed them with onion, garlic, mushrooms, and sausage. Then I added canned diced tomatoes, tomato paste, and tomato sauce for a yummy sauce. Combine with lasagna noodles, mozzarella, ricotta, and
