Yet Another Liquid Sunshine Day

Rain, rain, go away
Come again some other day

The old nursery rhyme sums up my feelings completely. Most of the time I actually like the rain but it has been wet, muddy, cold, and grey for far too many days.

We got our last box from the CSA last week. We enjoyed our summer of owning a share of an organic farm. The produce was fresh and delicious and we tried out quite a few new foods. However, we decided not to do it again next year. I definitely will be going to the Farmer’s Market every week for our fruits and veggies, I really enjoyed the trips down there and the food is marvelous. But the CSA just didn’t really work for us, we’d get an overload of some things and too little of others. The same thing happens in your own garden of course but you would plant for your tastes. Plant a little bit of beets, lots of tomatoes, little bit of fennel, tons of asparagus.

We still had an overload of carrots in our fridge and Ryan kept mentioning carrot cake so I finally got the grater out (didn’t even grate one knuckle!). The vegetable drawer is much lighter now that I’ve used up a lot of the carrots.

Carrot Cake

  1. Thanks Amy. I had not even noticed that I served it on Bugs Bunny plates. Lol! When I read your comment I was like, “Bugs Bunny plates, we don’t have Bugs Bunny plates (looked at photo), those are Marvin Martian plates!” Oh yeah, Bugs is there too. Actually so is Daffy Duck but he’s being smothered with carrot cake.

The cake recipe is very yummy. It’s from _Cooking Light: Five Star Recipes_ cookbook. ISBN 0-8487-1540-3. I followed the cake recipe exactly but I don’t put in nearly as much powdered sugar in the frosting as the frosting recipe calls for. I like my cream cheese frosting to taste like cream cheese– not sugar.

    Thanks for dropping by.
